Lucy Pittman Gemeny was well known for her Green Tomato Pickles, made from the following receipt.
Lucy Pittman married Andrew Gemeny in November 1967. She was well known in the family for these pickles. She died March 11, 1995 in Brandywine, MD.
Ingredients
- 1 gallon green tomatoes (16 cups sliced)
- ¼ cup salt
- ½ tablespoon powdered alum
- 3 cups vinegar (5% acidity)
- 1 cup water
- 4 cups sugar
- 1 tablespoon mixed pickle spices
- 1 tablespoon celery seed
- 1 tablespoon mustard seed
- ½ teaspoon cinnamon
- ½ teaspoon allspice
Instructions
Day 1 — Evening
Slice tomatoes. Sprinkle with salt and allow to stand overnight.
Day 2 — Morning
Drain the tomatoes. Pour 2 quarts of boiling water with powdered alum over the tomatoes and let stand 20 minutes. Drain and cover with cold water, then drain again.
Combine vinegar, water, and sugar. Tie cinnamon, celery seed, allspice, and mustard seed in a cloth bag and add to solution. Bring mixture to a boil and pour over tomatoes. Let stand overnight.
Day 3 — Morning
Drain solution and reboil. Pour reboiled solution over the tomatoes and let stand overnight.
Day 4 — Morning
Boil complete mix (tomatoes and solution) to a boil and place immediately into sterilized containers.
